
Jollof Rice

Ingredients:
2 cups long-grain parboiled rice
1/4 cup vegetable oil
1 onion, chopped
2 cloves garlic, minced
1 red bell pepper, chopped
2 tomatoes, blended
1 tablespoon tomato paste
1 teaspoon curry powder
1 teaspoon thyme
1 bay leaf
2 cups chicken or vegetable broth
Salt and pepper to taste
1/2 cup mixed vegetables (optional)
1 pound chicken or beef, cooked and sliced (optional)
Instructions:
Prepare the Rice: Rinse the rice under cold water until the water runs clear, then drain.
Make the Base: In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent. Stir in the minced garlic and chopped red bell pepper, cooking for another 2 minutes.
Add Tomatoes: Pour in the blended tomatoes and tomato paste, stirring well. Allow the mixture to cook for about 10 minutes until the oil starts to separate from the tomato mixture.
Season the Sauce: Stir in the curry powder, thyme, and bay leaf. Add salt and pepper to taste.
Cook the Rice: Pour the chicken or vegetable broth into the pot, bringing it to a boil. Add the rinsed rice, stirring well to combine. Reduce the heat to low, cover, and let it simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
Add Vegetables and Meat: If using, stir in the mixed vegetables and cooked meat, allowing them to heat through for about 5 minutes.
Serve: Remove the bay leaf before serving. Also you can add some Fried Plantains and chicken to the meal iif that's what you will like to eat!
