I visited St. Aubin a few years back, and while the colonial architecture and rum are definitely highlights, what really stuck with me was the vanilla plantation they have on the grounds. It's not huge, but it's fascinating. They actually grow the vanilla orchids right there, and you can see the whole curing process from green bean to the dark, fragrant pods.
