I visited St. Aubin a few years back, and while the colonial architecture and rum are definitely highlights, what really stuck with me was the vanilla plantation they have on the grounds. It's not huge, but it's fascinating. They actually grow the vanilla orchids right there, and you can see the whole curing process from green bean to the dark, fragrant pods. The guide explained how they hand-pollinate each flower, which is incredibly delicate work. I bought a few vanilla pods from their shop, and the quality is miles above anything I've found in a supermarket back home. They also use it in their rum at the distillery, so you can taste the connection.

If you go, plan your visit for mid-morning. The house tours are less crowded then, and you can enjoy the garden without the full heat of the afternoon. The cafe serves a decent vanilla tea and cake too, which is a nice break. Just one practical tip: the gift shop has some lovely local crafts and spices beyond vanilla, but the prices are a bit touristy. If you really want something special, wait for the market in Souillac on a Saturday. But for the experience of the estate itself, St. Aubin is well worth an hour or two. It's a peaceful slice of history that feels active, not just preserved behind glass.

oh wow, the hand-pollination detail is crazy. i had no idea vanilla was that labor-intensive. i've only ever had the extract, now i kinda want to track down real pods just to see what i'm missing
