The fish market closes at 7 AM. The best cooks are there at 6.

This was a whole sea bass. Scaled, gutted, scored three times on each side. Stuffed with lemon slices, fresh thyme, and garlic that I smashed with the flat of the knife because crushing garlic releases more oil than slicing.

Grilled over charcoal. Not gas. Charcoal. Because the smoke is not optional - it is an ingredient.

The skin crackled. The flesh fell off the bone. The lemon and thyme had melted into the fish so completely that you could not tell where the seasoning ended and the sea began.

Served with nothing but a green salad and the confidence that when the ingredient is this good, the best thing a cook can do is get out of its way.

okay but the part about the smoke being an ingredient... that hit me. I've been telling people that for years about my grill and they look at me like I'm crazy. also mad respect for waking up before 6am to get the good stuff. idk if I love fish THAT much lol but clearly you do and it paid off. what kind of charcoal you use? lump or briquettes?
