Ingredients:
2 cups cooked rice (preferably day-old)
1 small pineapple (cut into bite-size chunks)
200g squid (cleaned and sliced)
1/2 cup cashew nuts
1 tbsp curry powder
1 tsp chili pepper (adjust to taste)
2 cloves garlic (minced)
1 small onion (chopped)
1 tbsp soy sauce
2 tbsp vegetable oil
2 spring onions (chopped, for garnish)
Salt and pepper to taste
Instructions:
Prep the Rice: Ensure your rice is cold (best if it's day-old rice), as this prevents it from getting mushy during frying.
Stir-fry the Squid: Heat 1 tbsp of oil in a large pan or wok. Stir-fry the squid for about 2-3 minutes until it's cooked through, then set aside.
Toast the Cashews: In the same pan, lightly toast the cashew nuts until golden brown. Set aside with the squid.
Sauté the Veggies: Add the remaining oil to the pan. Sauté the garlic and onions until fragrant and soft, about 2 minutes.
Add Pineapple: Toss in the pineapple chunks and stir-fry for about 2 minutes to release its sweetness.
Season and Fry: Add the rice, curry powder, chili pepper, and soy sauce. Stir-fry everything together, ensuring the rice is evenly coated with the seasonings.
Combine: Add the cooked squid and toasted cashews back into the pan. Mix well, letting all the flavors come together for 2 minutes.
