Oh absolutely, I've been doing this for years with my mum's Ghanaian recipes. The key is knowing which dishes actually improve after a freeze versus ones that turn into mush. Soups and stews are your best friends here.

Groundnut stew (peanut soup) freezes like a dream. I make a huge batch on Sunday, portion it out, and it tastes even better on Thursday because the flavors meld together. The trick is to separate the protein. If you're using chicken or beef, pull it off the bone and store the meat separately from the soup base. That way when you reheat, the meat doesn't get all rubbery. I've found that freezing soup with bones still in creates a weird texture once thawed.

For fufu and swallow-type sides, here's something most people don't talk about. Don't freeze the fufu itself. Instead, I prep my cassava and plantain flour mix and store it dry in a jar. Then each night I just boil water and make fresh fufu in 5 minutes. It tastes restaurant quality compared to reheated frozen fufu which gets gummy.

Egusi stew also freezes beautifully but add the leafy greens fresh when you reheat. I freeze the melon seed base without the spinach or bitterleaf. Then when I'm reheating, I toss in a handful of frozen chopped spinach. Keeps that fresh green taste instead of the stew turning into a brown paste.

Another tip nobody mentions: use freezer bags and flatten them out to store. They stack like books, defrost way faster in a bowl of warm water, and you can break off just what you need.
