The meat or fish can be chicken, beef, pork, or groundnut sauce, and it is typically steamed in the leaves. Here’s a basic recipe for **Chicken Luwombo**:

Ingredients
- **Chicken** – 1 whole chicken, cut into pieces
- **Banana leaves** – 2-3 large leaves (for wrapping)
- **Onions** – 2 large, chopped
- **Tomatoes** – 3, diced
- **Carrots** – 2, sliced
- **Green pepper** – 1, chopped
- **Garlic** – 3 cloves, minced
- **Ginger** – 1 tablespoon, grated
- **Groundnut (peanut) paste** – ½ cup (optional, for a richer sauce)
- **Curry powder** – 1 teaspoon
- **Cooking oil** – 2 tablespoons
- **Salt and pepper** – to taste
- **Water or broth** – 1 cup

Instructions

1. **Prepare the Banana Leaves**:
- Wilt the banana leaves by holding them over a flame or placing them in hot water to make them pliable, so they don't tear during wrapping. Set them aside.

2. Prepare the Chicken and Sauce
- In a pan, heat the cooking oil over medium heat. Add the chopped onions, garlic, and ginger, and sauté until soft and fragrant.
- Add the diced tomatoes, green pepper, carrots, and curry powder. Cook for about 5 minutes until the tomatoes break down and form a sauce.
- Stir in the groundnut paste (if using) and cook for another 5 minutes. Season with salt and pepper to taste.
- Add the chicken pieces to the sauce and coat them well. Let it cook for about 10 minutes, stirring occasionally, to allow the chicken to absorb the flavors.

3. Wrap the Luwombo
- Place the wilted banana leaves on a flat surface, layering them if necessary to prevent leaks.
- Spoon the chicken and vegetable mixture into the center of the banana leaves.
- Carefully fold the leaves to enclose the chicken completely, forming a tight parcel. Tie the bundle with banana fibers or kitchen string to secure it.

4. Steam the Luwombo
- Place the wrapped chicken in a large steamer or pot with a rack. Add water to the pot without letting it touch the parcels.
- Cover the pot and steam the chicken for about 1-2 hours, depending on the size of the chicken pieces. The steam will cook the chicken and infuse it with the flavor of the banana leaves.

5. Serve
- Carefully unwrap the banana leaves and serve the chicken luwombo with traditional accompaniments like **matoke** (steamed green bananas), **rice**, or **posho** (Ugandan maize porridge).
- The dish is usually served right in the banana leaves for an authentic presentation.

Variations:
- **Pork Luwombo**: Substitute chicken with pork, prepared similarly.
- **Beef Luwombo**: Use beef instead of chicken for a heartier version.
- **Fish Luwombo**: Fish is used in some variations, especially with tilapia or Nile perch, combined with vegetables and steamed.
- **Vegetarian Luwombo**: You can also make a vegetarian version with a mix of vegetables and groundnut paste.

What does it for me and made me take a look at this recipe is the Banana leaves. The fact that it makes the basis on which the whole soup plus the chickens sit, is a sight to behold. More so, it'd add so much natural scent to the soup. I can't stop salivating for this Ugandan exquisite dish( Luwombo)
