Cooking knows no secrets,
when its heart is hidden,
it will reveal itself.
Cooking has no shortcuts;
when it seizes a soul,
it demands everything,
everything that was overlooked—
to sizzle and chill.
Cooking has no mercy;
even the most seasoned hand may falter,
but cooking does not forgive
a dish worthy of its flame,
nutrients worthy of blades,
when it consumes the chef,
it puts the brows, hands, and heart to work.
No one has the resolve to abandon cooking,
it starts from cleaning utensils,
to setting heat,
to having a desire
for mouth, throat and stomach.
It is a devotion with distraction.
If you neglect cooking,
the art of taste, flavour, and satiation will crumble,
cooking is a discipline,
an unyielding, beautiful discipline.
