My uncle has been running the same grill at the same cookout for twenty-three years. Same charcoal. Same marinade. Same spot in the backyard that he guards like it is a government post.

Nobody is allowed to touch the grill. Nobody is allowed to suggest a different charcoal brand. Nobody is allowed to ask if the chicken is done. "It is done when I say it is done."

The ribs take four hours. The potato salad takes an argument. The mac and cheese takes three different recipes from three different aunts who will all claim theirs is the one everybody ate.

This is the Fourth. Not the history. Not the politics. The grill. The family. The plate you eat standing up because all the chairs are taken by people who arrived early and have no intention of moving.

Happy Fourth. Eat something your doctor would not approve of.

My dad is the exact same way with his smoker. Been using the same rub for like 15 years and if anyone even LOOKS at his meat thermometer he gets all defensive lol. The standing up to eat part is too real. I swear my family buys one less chair every year just to keep the chaos going. Happy 4th!
