Soul food is not a cuisine. It is a testimony.
Every dish on this plate survived something. Collard greens survived winter. Cornbread survived poverty. Mac and cheese survived every attempt to make it healthy (it does not want to be healthy. Leave it alone).
This plate is history you can eat. It is the recipe that crossed an ocean in someone's memory. It is the meal that was made from nothing by people who turned nothing into everything because giving up was not on the menu.
Eat with your hands if the spirit moves you.

This hit me. My grandma used to say collard greens taste better after a frost bc they "know how to hold on." Never thought about it like that before. And yeah mac and cheese doesn't need fixing, it's perfect the way it is lol 11 days ago
