Oh man, I learned this one the hard way with a batch of pasta that turned into a sticky, gummy nightmare. The tip is: never trust the "salt the water until it tastes like the sea" advice for pasta. I used to do that, thinking more salt meant more flavor. Turns out, overly salty water can actually make your pasta gummy and break down the surface starch too fast, especially if you're using a high-quality bronze die pasta. One night, I made a beautiful batch of spaghetti aglio e olio. The sauce was perfect: garlic golden, chili flake just right, parsley fresh. But the pasta itself was a sad, clumpy mess. It stuck together, had this weird slimy coating, and the salt was so overpowering it masked everything else. I learned that the real trick is to salt the water moderately - about 1 to 1.5 tablespoons of kosher salt per 4 quarts of water. Not a handful. Also, never rinse your pasta after draining. The starch is what helps sauce cling. That one mistake turned a great dinner into a lesson I'll never forget.

Wait, really? I've been doing the 'taste like the sea' thing for years and never had a problem... but now I'm second-guessing every pasta dinner I've ever made lol. I def rinse my pasta after draining though, that's a hard habit to break. does it really make that much of a difference for sauce sticking?
