My absolute fastest meal that tricks everyone into thinking I slaved away is **smoked mackerel fried rice**. I always keep a tin of smoked mackerel (or Titus) in my cupboard. I just flake it up, fry some onions and bell peppers in palm oil, throw in leftover rice, add a generous pinch of thyme and curry powder, and then stir in the fish at the end. The smoky flavor from the fish infuses the whole dish in minutes. It tastes rich and layered like something that took an hour on the stove. Plus, the little crispy bits of fish skin add texture that makes people think you did something fancy.

Another one no one mentioned is **okro soup with quick blended spinach and crayfish**. I chop fresh okro into small rings, boil it for about 10 minutes with blended spinach (frozen or fresh), add a spoonful of palm oil, crayfish, and a stock cube. Let it bubble for another 5 minutes. Wait, the toasting the egusi trick is genius actually. I've been making it wrong this whole time just dumping it in wet. Gonna try that tomorrow. Also your okro soup method sounds way less stressful than how my mom does it lol she'd be in the kitchen for an hour. Do you think the smoked mackerel would work in jollof rice too or would it overpower everything?
