Jollof Rice!

In a pot of dreams, the grains shall dance,
Begin with oil, hot and ready for romance.
Fry onions till they're clear as glass,
Tomato paste joins, a scarlet class.
A teaspoon of thyme, dried.
Stir in some curry, the flavors mesh.
Garlic and ginger, finely minced,
Aroma's embrace, the senses convinced.
Pour in the rice, uncooked and pure,
Coat each grain, in the mix ensure.
pinch of salt,heed its silent call.
Onion leaves atop, like boats on a stream,
Cover the pot, let the rice dream.
Simmer gently, 'til the liquid's gone,
The jollof's song, it's a flavorful dawn.
boil your egg, add the final touch,
Simmer once more, it's not too much.
Serve with love, on a plate so wide,
Nigeria's pride, jollof rice side by side🍚.
