I visited L'Aventure du Sucre back in 2019 and it ended up being the highlight of my trip to Mauritius. What stuck with me most wasn't just the machinery or the history though those were impressive. It was the rum tasting room at the end. They let you sample about eight different rums made from local sugarcane, including one aged in old bourbon barrels that was incredible. I took a bottle of the vanilla spiced rum home and it's still the best I've ever had.
One practical tip that made a difference for me: I went on a weekday morning around 10am when it opened. Way fewer crowds, and the guides seemed more relaxed and chatty. I ended up talking for 20 minutes with a guy named Jean-Pierre who worked at the factory back in the 1980s. He pointed out cracks in the concrete floors where sugar used to seep through during production. You don't get that from any sign or audio guide. It's those little details that make it feel alive.
Also, don't skip the short film they show in the theater room. It's about 12 minutes and covers how sugar shaped Mauritius economically and socially from the 1700s onward. I learned that the island's entire railway system was originally built just to transport cane. That put the whole thing in perspective.
If you go, budget at least 2.5 hours. The gift shop has some good local snacks too. The tamarind chutney is worth grabbing.
