Hey there, I am here with another recipe for this Jollof I call the ‘Golden Jollof’
I knew I put in my best when I prepared this dish
Read my recipe below and I hope you try them 😊
Ingredients
- 3 eggs
- Curry
- Blended onion, red pepper, habanero, tomatoes (dehydrated onion, turmeric and black pepper with dry grounded pepper was blended together)
- Turmeric
- Dehydrated onion
- Black pepper
- Maggie
- Dry grounded pepper
- Chopped vegetable, onion, and carrot
- Palm oil
Process
- Put your pot on the stove and add palm oil. Let it hot for a while and add the blended mixture. Stir and let it cook for a minute, add salt afterwards and stir. Add maggi, small carrot, onions, and stir.
- Add your washed rice and stir it. Let it cook for a minute then you add water to cook properly (I usually do that so the seasoning mix with the rice before cooking it.
- Check the food after 20 minutes and make sure it’s soft to eat. Afterwards, you add the remaining carrot, onions and vegetables then turn off the stove for it to steam.
- While it’s steaming, get your beaten eggs, carrot, vegetables and onion.
I added oil to the pan and went in with the carrot and onions so it fries for a moment. I stir and added one Maggie for taste and a little salt.
- After that, I add in small oil again and let it fry for a few seconds. I go in with my eggs which I added a pinch of salt to and scramble it. I stir till I am sure it’s ready.
Serve the rice with the egg sauce as a side and enjoy with a cold drink.
